Since it’s summer and time to bring delicious dips to picnics, I thought I’d share my recipe for guac with you. This recipe is delicious enough to wow your friends and family with. Or, if you love it as much as we do, just share with a loved one. Michael and I may or may not have polished off this entire recipe in one sitting. One of the best things about guacamole is that it’s pretty easy to make. If you can dice, chop and mix with a fork, you can make magic!
You will need:
1/4 Cup diced red onion
2 small tomatoes, diced (seeds removed)
2 TBS fresh cilantro, chopped
2 cloves garlic, minced
The juice of one lemon
*or 2 TBS of the kind that is in the fake plastic lemon.
3 ripe avocados
2 TBS of sour cream
a few dashes of your favorite hot sauce
We need to talk about avocados. They are delicious. They are rich and luscious like butter but they are a vegetable, maybe they are technically a fruit. Anyway, be sure they are RIPE before trying to use them. If they give a little when you squeeze them, they are ripe. I try to buy them when they are ripe. I don’t like to wait for my guac. If you can’t find them ripe, let them sit on a window sill for a few days until they are ready.
Note: This is one time I DO NOT let my red Kitchenaid mixer do the work. There is nothing better than getting a big hunk of avocado when you’re eating the guac. Mmmm…
